I attempted a spelt pie crust today for the first time (since it’s easier on our stomachs than wheat). It wasn’t quite the same, but it wasn’t too bad. This morning I made gluten-free banana pancakes with peach topping. I tend to do most of the cooking on the weekend and on vacation because Mike does it daily, and I do like to cook. Often I tend to be overambitious, though, as is my wont in many things!

Chris declared the spelt pie crust to be better than the usual–sweet boy. I’m not too sure about that, but at least Mike and I got to eat pie. 🙂
